Stuffed Sweet Peppers

I’m not sure where I first encountered this delicious dish, Stuffed Sweet Peppers, but I’m so glad I did! My husband and I now make stuffed peppers often as a side when we have steaks. Who would have thought to stuff sweet peppers with pepperoni and mozzarella cheese and then grill them? I didn’t, but I’m certainly glad someone introduced us to it.

Stuffed Sweet Peppers

Here’s how we do it:

Ingredients:

  • Sweet peppers (orange or yellow are our favorites)
  • Snack stick pepperoni (or slices/big pepperoni cut into smaller pieces)
  • Mozzarella cheese (snack sticks, block, or shredded)

Instructions:

  1. Prepare the Peppers:

    • Choose larger sweet peppers if possible, but mini sweet peppers also work well.
    • Cut out the stems, then use a knife to carefully cut the veins inside and remove the seeds. Wash the peppers, using water to help flush out the seeds.
  2. Stuff the Peppers:

    • Insert pieces of pepperoni and mozzarella cheese alternately into each pepper.
    • Pack the cheese as far down into the pepper as possible, alternating with pepperoni until the pepper is full.

  • Cooking Options:
    • Grill:
      • Place the stuffed peppers directly on the grill or in a cast iron skillet on the grill.
      • Grill for about 40 minutes.
    • Oven:
      • Place the stuffed peppers in a silicone baking pan.
      • Bake at 350°F for 30 minutes.

Tips:

  • If you can’t find snack stick pepperoni or mozzarella, use slices or cut up a block into small pieces. Shredded mozzarella works well too.
  • Stuffed sweet peppers are a great appetizer or side dish, perfect for game day snacks or as a simple, yet tasty addition to any meal. They only require three ingredients and about 30 minutes of baking time.

  • 1 Bag Sweet Peppers or Mini Sweet Peppers
  • 1 Block Mozzarella Cheese
  • 2 Bags Pepperoni Snack Sticks

Instructions
 

  • Pre-heat oven to 350° or start grill.
  • Cut seeds out of peppers and clean.
  • Stuff peppers with cheese and pepperoni.
  • Place peppers in pan to bake or on grill.
  • Bake in oven for 30 minutes or grill for 40 minutes.
  • Serve and enjoy!
